Shortridge was diagnosed with dermatitis herpetiformis, an illness related to celiac disease and sprue. To avoid anemia, Shortridge did not take medications, but removed gluten from his diet, a trend not popular in the early 1980s. Shortridge developed a gluten-free bread before a commercial mix was mass-produced.
